20 egg yolks, 500 g sugar, Water, 1 lemon peel, Cinnamon stick, Gofio (to add when serving).
First, put half a glass of water, the sugar, lemon zest and cinnamon stick into a pan and cook it on a low heat to make a thick syrup. When it is ready, remove from the heat and allow it to cool until it is lukewarm. Then remove the lemon peel and the cinnamon stick. Whisk all the yolks in a big bowl and then add them gradually to the syrup, stirring well. Now place the pan with the syrup and the whisked yolks on the heat to cook gently, stirring constantly. Remove from the heat when the mixture is thick but do not let it boil. Pour into dessert glasses or similar and then add the gofio on top.
